Position Summary

 

Responsible to lead food, beverage, costing, waste strategies for Food and Beverage, service and menu implementation cost planning, efficiency systems & acquisition of new equipment. Analyzes for the F&B department recipe costing and waste, setting monthly targets. Evaluates results from Medallia application keeping KPIs and Overtime results, developing corrective guidelines. Formulates solutions that provides continuous improvement, efficiency on usage of resources and cost savings. This role will work closely with F&B Directors to ensure alignment with corporate goals and initiatives, managing projects timelines and Supply Chain analysis. This position will develop and maintain periodic and ad-hoc reports to monitor performance and will prepare and conduct presentations and action plans that supports department's KPIs related to food, beverage and waste aligned with corporate targets and expectations. This position may include unique requirements specific to the business, delivers reports to F&B Management of that business unit (production and service of food and beverage) as to any unique requirements that are different or in addition to this core descriptions.

  • Identifies opportunities to improve operating efficiencies and performance through information gathering and analysis, identifying cost savings opportunities, keeping all adopted forms up to date with most recent results.
  • Maintains department calendar of activities through Microsoft Project using Gantt charts, reports deviations to plans and delayed milestones. Procures the information that resolves these gaps.
  • Formulate forecasts and monitors food and beverage department KPIs to identify trends and improve operations.
  • Develops business cases for special projects and measure results.
  • Responsible for strategic initiatives and projects impacting food and beverage cost and waste.
  • Manages capital equipment projects and smallwares rollouts costs
  • Collaborates with food and beverage Directors to present solutions to KPIs gaps, to meet or exceeds department¿s measured results.
  •  Works with Information Technology to develop tools that calculates food and beverage cost, in detail of waste, COS and other components defined by the food and beverage Administration. Analyzes and maintain the reporting forms via Medallia to satisfy departmental goals and provide reports to corporate and ships leadership as needed.
  • Summarizes results and trends through presentations, databases, graphs and schedules as needed.

 

Job Requirements

Requirements

  • Bachelor's degree (BA) of four-year college or university; or equivalent work experience is required. MBA or advanced business degree preferred.
  • 3 to 5 years related experience in financial / business analysis or related field.
  • Cruise or Travel Industry experience strongly preferred.
  • Advance Microsoft ® Excel, Access, Word, PowerPoint and Project strongly preferred. Knowledge of Hyperion Interactive Reporting Studio ® is required. 

  •  Ability to work independently and collaboratively.

  •  Ability to work, interact, and communicate with external / internal customers at all levels.

  • Ability to effectively present information to executive management and public groups.

  • Must be detail oriented to ensure accuracy in data and analysis.

  •  Ability to solve complex problems with a variety of components in situations where no standardization exists.

  • Strong analytical and reporting skills to identify & interpret trends and provide achievable recommendations.

  •  Ability to analyze complex data, draw conclusions, develop and execute appropriate action plans. Ability to grasp complex concepts quickly and independently.

  • Bold thinker with ability to generate creative and actionable recommendations to increase revenue, reduce costs and improve operational performance, efficiency and excellence.

  • Exceptional interpersonal, communication, presentation and listening skills, including the ability to adjust and effectively interact with external customers, internal staff, food and beverage corporate and ships leadership; and executive management.

  •  Understanding of strategic objectives (revenue/APD growth, cost of sale reduction, etc.) to develop reports to support food and beverage corporate and ships leadership to achieve those objectives.

  • Advanced analytical skills should include mathematical modeling; data management, statistical analysis and broad exposure to operations research.
