Based in Miami, FL and reporting to the VP, Food & Beverage, the Director position is highly focused on process improvement and developing a culture for operational excellence. For the first 18 months, the primary focus will be War On Waste (WOW) strategy, roll out and delivering results. After which, 25-40% of the time will be focused on ensuring the success of WOW.

This keenly detail-oriented individual strives to seek out operational inefficiencies and enhance them to drive profitability, quality and consistency among both the front of house and back of house operations. This position will collaborate with other F&B directors while managing a team of individuals who assist in strategizing, implementing, improving and then maintaining new systems and processes. The director role will also dedicate 25% of their time to strategically support all planning efforts for the War on Waste initiative with a focus on execution of the vision.


Essential Duties and Responsibilities: 

Manages a team that works to understand and improve upon all current F&B processes. This includes but is not limited to smallwares, equipment, food cost management, recipe management, communication channels and any special projects.

Provides subject matter expertise in development of culinary and product process improvements through testing, refining, evaluation and implementation of preparation techniques, processes or tools for existing or new product development and equipment.

Oversees the War on Waste (WOW) initiatives plans for development, design, testing, implementation, and tracking of the program. 

Manages Capital Allocation Requests (CARs). Accountable for all project-related KPIs. Assist in negotiations with outside vendors to ensure best-price-guarantee and authorize all contracts related to the project. 

Sets strategy to develop processes that facilitate better cost management as it relates to the food waste, prep labor and cook times/line flow development/process.

Establishes and enforces project tracking tools for all F&B-related projects to ensure on-time delivery and successful outcomes.

Develop audit tools and cadences to ensure teams can track progress on newly implemented techniques and process improvements. 

Works cross-functionally with other departments such as Procurement, Learning & Development, Finance, etc. to establish processes for maximum efficiency 

Oversees plans for implementation, training and testing of culinary techniques with Operations. Assist in the development, design or updating of culinary programs to improve F&B policy adherence and strive for operational excellence.

Partners with Chefs and F&B Director team to deliver consistent high-quality food and service to our guests.

Partners with various teams on the development of new restaurant concepts.

Works with Culinary on the development of recipes, translations, simplification of steps for executional replications; ensures recipes are clear, concise and easily understood by wide audience.

Analyzes, standardizes and manages one-best-way to electronically house, communicate and share F&B data/information such as SOPs, memos, templates, par levels, etc.

Maintains a positive attitude for continuous improvement and imparts this culture on team members as well as other departments that touch F&B. 

Seeks operator feedback, visits ships and/or attends Operational meetings to gain insight into potential enhancements to systems, methods and procedures to deliver operational excellence.

Partners with Newbuild to improve galley/other F&B space designs based on existing operational insights.


Education, Experience, Knowledge & Skills:

Bachelors degree required; MBA preferred


Job Requirements

10+ years business, product, or operations experience

10+ years of experience in Food & Beverage with increasing leadership roles

5+ years of experience with restaurant, accounting, or inventory systems management 

Ability to apply strong analytical, conceptual and strategic thinking

Highly organized with an ability to work in a fast-paced work environment managing multiple projects

Strong business acumen 

Willingness to take personal initiative

Ability to assemble, lead and influence cross functional teams to develop strategies that include input and buy-in from all stakeholders

Strong attention to detail 

Candidate must possess strong written and oral communication skills, including the ability to communicate effectively at the senior most executive levels of a company

Ability to grasp the complexities of the business to effectively translate that into a strategy

Effective decision-making skills & highly successful in problem-solving

Experience in using project tracking tools 


Financial Responsibilities (For Management Roles Only)

Assist with annual budget planning

Physical Demands:


The employee is regularly required to sit, stand, write, review and review recipes and manage databases and operate the computer. The employee communicates, listens, compares variables, and assesses information. The employee regularly moves about the office complex, and may climb, descend, lift or move 10 lbs.
