Job Description

Position Summary:

Reports to the Director of Beverage Operations.  The Manager of Beverage Operations manages overall  and day to day execution of Beverage Operations for the Royal Caribbean & Azamara Brands, including performance as related to defined Key Result Areas and ongoing support for vessels as needed.

Essential Duties and Responsibilities:
1. Supports the vessels in the execution of the processes, services and products required by the food and beverage function and provides problem resolution, as may be required regarding the food & beverage product, concept, marketing or services on a daily basis.

2. Support all new building and revitalization projects as well as new concept development and implementation in all capacity's that involve Beverage Operations.

3. Develops & maintains performance management programs  (Execution Guides, Bar Managers Schedule, Bar Manager Performance Management Data Base etc..) used on fleet wide bases to ensure tracking and targeting of all business performance indicators, and makes the appropriate recommendations to the functional directors of each department, to better target and drive performance.

4. Leads Food & Beverage operations consultants to manage revenue & expense programs vs. financial goals fleet wide, researches fluctuations and advises on adjustments to programs to meet profitability targets.

5. Establish appropriate quality, financial and security controls on information resources to assure effective and efficient use of information technology within the food and beverage function, use technology and data to analyze business performance, as well as evaluates the effectiveness of internal controls to ensure compliance with Sarbanes-Oxley requirements.

6. Provides the appropriate guidance to establish all Food & Beverage budgets and forecasts, based on business analysis, market forecasts and planned initiatives within Food & Beverage Operations of $300M+ in expenses and $200M+ in revenues.

7. Sources, interviews and recommends to the Director of Beverage Operations candidates for hire, and manages and maintains the bar manager, assistant bar manager and traveling bar manager schedule for the Fleet.

8. Ensures the completeness, and ongoing execution of training programs for both Crew, Assistant Managers and Managers.

9. Performs other duties as required. 

Job Requirements


Education & Experience:
Bachelors degree from an accredited college or university in related field, Hospitality preferred required; Industrial Engineering a plus. MBA Degree preferred.
Five to ten years of experience developing and implementing food and beverage profitability goals, policies, products and services in the hospitality industry.
Previous experience with Point of Sale systems (i.e. Micros, Infogenesis etc...)
Financial background, controls and operating systems.
Travel requirement of up to 33%

Knowledge and Skills:
Judgment and decision-making, i.e. weighing the relative costs and benefits of a potential action.
Critical Thinking; using logic and analysis to identify the strength and weaknesses of different approaches.
Ability to develop and implement Process Reengineering practices to improve efficiencies and develop cost saving initiatives.   
Ability to respond to common inquiries or complaints from customers, regulatory agencies, or members of the business community. 
Ability to negotiate project contracts and services as needed.
Ability to work with various computer programs and applications such as Microsoft office programs, restaurant reservations programs, email, and web based applications, electronic management applications & approval processes, etc.

The employee is occasionally required to walk to the dock, ascend and descend the vessel. This position may regularly travel. Visual requirements include distant, close and color vision, and ability to adjust focus.

Work Environment:

The environment includes work inside/outside the office, travel to other offices, as well as domestic, international, and shipboard travel.
